Homemade Pickles (Achaar) | घर के बने अचार – सेंधा नमक एवं सरसो तेल युक्त

दादी माँ के हाथों से, उत्तर प्रदेश के गाँव की पारम्परिक विधि से बने हमारे तीन अचार—देसी आम का अचार, देसी आम का सूखा अचार और लसोड़े का अचार—घर के बने खाने का वही अपनापन लेकर आते हैं। इन्हें बिना मशीन के, सरसों के तेल, सेंधा नमक और शुद्ध मसालों से तैयार किया जाता है। इनमें कोई कृत्रिम रंग, स्वाद या प्रिज़र्वेटिव नहीं मिलाया जाता।

आयुर्वेद में खट्टे और नमकीन स्वादों को भोजन के प्रति रुचि बढ़ाने वाला माना गया है। थोड़ी मात्रा में परोसा गया अचार सादे भोजन में भी स्वाद जोड़ता है। लसोड़ा अपने प्राकृतिक रेशे और विशिष्ट लसदार गूदे के लिए जाना जाता है। हमारे लसोड़े को अचार बनाने से पहले चार महीने तक छाछ में डुबोकर रखा जाता है। इस धीमी तैयारी से उसे अपना अलग स्वाद मिलता है।

Made by Dadi Maa’s hands using a traditional Uttar Pradesh village method, our three pickles—Desi Mango Pickle, Dry Desi Mango Pickle and Lasoda Pickle—bring the warmth of homemade food to the table. They are prepared without machines, using mustard oil, rock salt and pure spices, with no added artificial colours, flavours or preservatives.

In Ayurveda, sour and salty tastes are traditionally associated with making food more appetising. A little pickle adds flavour even to a simple meal. Lasoda is known for its natural fibre and distinctive, gently sticky pulp. Before pickling, we immerse our lasoda in buttermilk for four months, giving this slowly prepared pickle its characteristic taste.

देसी आम से बना यह अचार घर का बना अचार  है। मसालों की परत और सरसों के तेल का स्वाद इसे रोज़ के भोजन के साथ खाने योग्य बनाते हैं। दाल-चावल, पराँठे या सादे भोजन के साथ परोसें।

हमारे लसोड़े के अचार को बनाने की तैयारी चार महीने पहले शुरू होती है। अचार बनाने से पहले लसोड़ों को चार महीने तक छाछ में डुबोकर रखा जाता है। इस प्रक्रिया में समय अधिक लगता है, लेकिन इससे लसोड़े का स्वाद और गुणवत्ता प्राकृतिक रूप से निखरते हैं। फिर इन्हें पारंपरिक मसालों, सरसों के तेल और सेंधा नमक के साथ घर पर अचार के रूप में तैयार किया जाता है। रोटी, पराँठे या दाल-चावल के साथ इसका आनंद लें।

Preparing our lasoda pickle begins four months before it is made. The lasoda fruits are immersed in buttermilk for four months before pickling. This takes more time, but naturally develops their distinctive flavour and quality. They are then prepared at home with traditional spices, mustard oil and rock salt. Enjoy this achaar with rotis, parathas or dal and rice.

यह देसी आम का सूखा अचार उन लोगों के लिए है जिन्हें मसालों में लिपटे आम के टुकड़े पसंद हैं। इसकी गाढ़ी बनावट इसे सामान्य तेल वाले आम के अचार से अलग रूप देती है। सरसों के तेल और सेंधा नमक से तैयार यह अचार पराँठे, पूरी और रोज़ के भोजन के साथ परोसा जा सकता है।
