गजक, गुड़ और तिल से बनने वाली यह मिठाई कितनी पुरानी है? करीब 4-5 हज़ार साल पुरानी।

यह दुनिया की सबसे पुरानी मिठाइयों में से एक है। गुजरात के कच्छ ज़िले में हाल ही में पुरातत्व विद्वानों ने जो हड़प्पा काल का स्थल खोजा है, वहाँ तिल भी मिले हैं और गुड़ के अवशेष भी। प्राचीन भारत में तिलोदन (तिलों की खीर) का भी ज़िक्र है, और राजस्थान, मध्यप्रदेश और गुजरात के आदिवासी इलाकों में आज भी आदिवासी और किसान सर्दियों में तिल, गुड़ और घी से बना पकवान खाते हैं। इस पकवान का नाम ही “जंगल” है। यह “जंगल” राजस्थान में गुजरात की सीमा से लेकर भीलवाड़ा-अजमेर की अरावली पहाड़ियों के गाँवों-कस्बों तक आज भी खाया जाता है।

दुनिया में सबसे ज़्यादा मानव गुफाएँ और शैल चित्र खोजने वाले महान पुरातत्वविद ओमप्रकाश कुक्की कहते हैं कि भारत में तिल चौथ का त्योहार ही इतिहास का, गजक का और तिलोदन का बहुत बड़ा सबूत है।

भारत, जहाँ 13 हज़ार से ज़्यादा मिठाइयाँ और मीठे पकवान बनते हैं, वहाँ बाज़ार की ताक़तों ने “कुछ मीठा हो जाए” की विज्ञापन लाइन से हमें चॉकलेट खाना सिखा दिया। सिखाया, वहाँ तक भी ठीक था, लेकिन गजक जैसी ग़ज़ब की मिठाई खाना भुला दिया। बाक़ी काम डायबिटीज़ के डर ने कर दिया और लोगों से मीठा ही छुड़वा दिया। गजक न सिर्फ़ पौष्टिक है, बल्कि स्वादिष्ट भी।

उत्तर भारत में सर्दियों की रातों में गजक का आनंद ही कुछ और है। जयपुर में भी गजक बहुत मशहूर है, जहाँ कदम-कदम पर करीब 10 हज़ार दुकानें हैं। राजस्थान में ब्यावर की तिलपट्टी और मध्यप्रदेश के मुरैना की गजक भी देश की सीमाएँ पार कर चुकी हैं।

भारत के साथ ऐसे-ऐसे षड्यंत्र हुए हैं कि हलवा, जलेबी और कलाकंद तक को विदेशी धरती का बता दिया जाता है, जबकि भारत में ये चीज़ें बहुत पहले से बन रही थीं। भारत के साथ मुश्किल यह है कि वह इतना उदार है कि कोई इतिहासकार कुछ कह दे, तो उसे ही सच मान लेता है।

देसी-विदेशी छोड़िए, यह बताइए कि जो मज़ा करारी गजक, कुरकुरी तिलपट्टी और ताक़तवर “जंगल” में है, वह चॉकलेट या केक-पेस्ट्री में आता है क्या? सच-सच बताइए।

How old is gajak, this sweet made of jaggery and sesame? About 4,000 to 5,000 years old.

It is one of the oldest sweets in the world. At a Harappan-era site recently discovered by archaeologists in Kutch district of Gujarat, both sesame and traces of jaggery have been found. Ancient India also mentions Tilodan (sesame kheer), and in the tribal areas of Rajasthan, Madhya Pradesh and Gujarat, tribal people and farmers still eat a dish made of sesame, jaggery and ghee in winter. The dish is actually called “Jangal”. This “Jangal” is still eaten in Rajasthan, from the Gujarat border to the villages and towns of the Aravalli hills around Bhilwara and Ajmer.

The great archaeologist Omprakash Kukki, who has discovered the most human caves and rock paintings in the world, says that the festival of Til Chauth in India is itself big proof of the history of gajak and tilodan.

In India, where more than 13,000 sweets and sweet dishes are made, market forces taught us to eat chocolate with the ad line “kuch meetha ho jaye”. Teaching us that was still fine, but they made us forget amazing sweets like gajak. The fear of diabetes did the rest, and made people give up sweets altogether. Gajak is not only nutritious, but delicious too.

In North India, enjoying gajak on winter nights is something special. Gajak is very famous in Jaipur too, where there are about 10,000 shops at every step. The tilpatti of Beawar in Rajasthan and the gajak of Morena in Madhya Pradesh have also crossed the country’s borders.

Such conspiracies have happened with India that even halwa, jalebi and kalakand are said to come from foreign lands, while these things were being made in India long before. The problem with India is that it is so generous that if a historian says something, it accepts that as the truth.
